Hello there Dark Chocolate Energy Bites!
These are perfect for getting a quick energy boost throughout the day if you're starting to feel sluggish or if you need a pick-me-up after a long work out!
Dark chocolate is full of antioxidants, fiber, plus this recipe includes a little bit of protein added with the addition of quinoa and pepitas.

Dark Chocolate Energy Bites Recipe:
Yield: 24 Bites
Cook Time: 20 Min
Ingredients:
- 16 oz Dark Chocolate Melting Wafers or
Quality Dark Chocolate, Chopped
- 1 tsp Sea Salt
- 1/8 Cup Quinoa, Puffed
- ¼ Cup Whole Almonds
- 1/8 Cup Pepitas
- 1/8 Cup Dried Cranberries
- 2 tsp Sea Salt Flakes
Directions:
1. Gather all ingredients. Measure out all ingredients and set aside.
2. Next, bring a small pot of water to a simmer over low heat.
3. In a second small pot, add the dark chocolate wafers or dark chocolate and place over the simmering pot of water.
4. Let the chocolate melt slowly, stirring occasionally. Add 1 tsp sea salt.
5. In a small sauté pan, toast quinoa until it begins to puff/pop.
6. Once the chocolate is completely melted, using a Silpat or parchment paper, pour quarter sized chocolate dollops, 2 inches apart from each other until all the chocolate is used.
7. Once the chocolate is starting to set up, carefully press the puffed quinoa, whole almonds, pepitas, dried cranberries, and sea salt flakes into each chocolate bite. Once they have completely set, you’ll be able to easily pop them off the parchment paper and enjoy! :)
Tips/Tricks:
- You can also use milk chocolate, white chocolate, or even a variety of all three!
- I recommend washing and drying the quinoa before preparing. Rinse the quinoa using a fine mesh strainer.
