Homemade Drop Scones w/ Fresh Cream

I love scones!! I love their soft, airy texture, especially after they have just come out of the oven! Pair them with some fresh homemade whipped cream, and you'll be wishing you had found this recipe sooner, enjoy :)

Homemade Drop Scones w/ Fresh Cream Recipe:


Yield: 10 Scones

Cook Time: 45 Min

Ingredients:

- 1 Cup Pastry Flour

- 1 Tbsp Sugar

- 1 ½ tsp Baking Powder

- 1/16 tsp Baking Soda

- 3 Tbsp Chilled Coconut Oil,

Cut Into Small Cubes

- ½ Large Egg

- ¼ Cup Buttermilk

- *Jam or Whipped Cream

Directions:

1. Preheat oven to 350F.

2. Combine the pastry flour, sugar, baking powder, and baking soda in a large bowl.

3. Cut in the coconut oil into the flour mixture using a pastry cutter or fork until mixture begins to look like crumbs.

4. In a small bowl, whisk the egg and buttermilk together. Combine the liquid ingredients into the dry ingredients and mix until a sticky dough forms.

5. Spray a cookie sheet with non-stick spray or use a silpat. Drop scones using a spoon or ice cream scoop with a spring-loaded handle onto sheet two inches apart from each other.

6. Bake for 12-15 minutes or until the bottoms turn golden brown.

7. Pair with jam, jellies, butter, or fresh whipped cream, enjoy!

Tips/Tricks:

- Store the scones in an airtight container, and they will last for up to five days!
