Kettle Cooked Potato Chips

One of my favorite foods to snack on is kettle cooked potato chips!! But why are the good ones in the store sooo expensive?! It's a POTATO... So in the spirit of saving money, here's my take on homemade potato chips that won't break the bank, I hope you enjoy! :)


Kettle Cooked Potato Chips Recipe:


Yield: ~2 Cups

Cook Time: 30 Min


Ingredients:

- 1 Large Russet or Golden Yellow Potato

- Sea Salt, As Needed

- 3-4 Cups Coconut, Vegetable, or Peanut Oil


Directions:

1. Wash and scrub potato, let dry on paper towel.

2. Add oil of choice to a large pot or Dutch oven. Heat oil to 350°F.

3. Slice potato as thin as possible using a mandolin or very sharp knife.

4. Soak the slices in ice water for about 20 minutes and then rinse.

5. Place potato slices in hot oil and fry until golden brown. Turn the slices occasionally to prevent burning.

6. Place cooked slices on a paper towel to soak up extra oil, and season immediately with sea salt, enjoy!


Tips/Tricks:

- Peanut oil has a very high smoke point and yields the best crispy and golden potato chips.

- Coconut oil imparts a slightly sweet taste to the potato chips, would be best for cinnamon sugar dusted chips or sweeter flavors.
