Manicotti w/ Creamy Parmesan Cheese Sauce

Have you ever tried homemade manicotti!?


It's the perfect dish for parties, quick week-night meals, or even impressing your loved ones with a delicious and simple meal, I hope you enjoy :)





Manicotti w/ Creamy Parmesan Cheese Sauce Recipe:


Yield: 12 Manicotti Servings

Cook Time: 1 Hr 10 Min


Ingredients:

- 12 Manicotti Pasta Tubes/Shells

- 1 ½ Cups Vegetable Stock

- 16 oz Ricotta Cheese or Vegan Alternative (Kite Hill)

- ¼ Cup Shredded Parmesan Cheese for Topping

- Optional: Parsley for Garnishing

- Creamy Parmesan Cheese Sauce:

o 2 Tbsp Olive Oil

o 1 Large Yellow Onion, Chopped

o 1 Small Shallot, Minced

o 2 Tbsp Flour

o ½ Cup Vegetable Stock

o ¼ Cup Parmesan Cheese, Grated

o 1 Cup Coconut Cream or Heavy Cream

o 2 ½ tsp Sea Salt

o 1 tsp White Pepper


Directions:

1. Preheat oven to 375 degrees. Bring a large pot of water to boil, add the 1 ½ cups vegetable stock to the boiling water.

2. First, cook the manicotti noodles in the flavored water until they are almost “al dente”. (Remove just before they become over cooked)! Let noodles cool under cold running water immediately, then strain & set aside.

3. Next, chop onion, mince shallot, and gather all remaining ingredients. Measure out everything else needed to prepare sauce.

4. Heat a large skillet over medium high heat. Add olive oil and heat. Add the onions and shallot, cook until onions are translucent.

5. Add the flour, cook for 1 minute. Then add the vegetable stock, grated parmesan cheese, coconut cream or heavy cream, sea salt, and white pepper.

6. Let sauce simmer over medium heat for 5-6 minutes until the cheese is melted.

7. Remove the sauce from the heat and spray a 9x13 casserole or baking dish with non-stick cooking spray.

8. Fill manicotti noodles with ricotta cheese using a spoon or a piping bag if you have one on hand. (Link on website). Place noodles inside casserole dish and pour the cheese sauce over the top.

9. Bake for 20-25 minutes until the ricotta is warm in the center. Garnish with additional shredded parmesan cheese and chopped parsley, enjoy! :)


Tips/Tricks:

- Did you know they make gluten free manicotti shells?! I have attached a link to Amazon on my website for this recipe if you’d like to try them gluten free! :)

- You can also make a rosé sauce by mixing some marinara/pasta sauce into your creamy parmesan cheese sauce for even more flavor! (*Or if you have picky eaters at home).
