Veggie Broccoli Salad

This is absolutely one of my favorite salad recipes! This salad holds up for a few days in the fridge very nicely, making this one of my go-to's for work lunches. This is also the perfect salad for a large family gathering, I hope you enjoy!

Veggie Broccoli Salad Recipe:


Yield: 8 Servings

Cook Time: 15 Min

Ingredients:

- 1 Large Head of Broccoli, Cut into Florets

- ½ Red Onion, Diced

- 1/3 Cup Pecans, Chopped

- Dressing:

o 2/3 Cup Veganaise or Mayonnaise

o ¼ Cup Red Wine Vinegar

o 1/8 Cup Succanat Sugar

o 2 tsp Black Pepper

o 1 tsp Sea Salt

o 1 tsp Fresh Lemon Juice

o 2 Tbsp Nooch or Nutritional Yeast (For Cheesy Flavor)

- *Optional: 1 Cup Shredded Cheese

Directions:

1. Wash and prepare broccoli florets and chop onion. Set aside in a large bowl.

2. Next, prepare the dressing by whisking together the veganaise or mayonnaise, red wine vinegar, sugar, black pepper, sea salt, lemon juice, and nooch or nutritional yeast.

3. Pour dressing over broccoli and onions and let chill for 1-2 hours before serving.

4. Sprinkle chopped pecand or extra nooch on top before serving, if desired, enjoy!

Tips/Tricks:

- Chilling the salad for 1-2 hours before serving allows for all the flavors to intensify and “marinate”, thus giving you a more flavorful dish!
